Its appearance could be mistaken for a Dutch cheese, from the style of the rind, which is very attractive as it has been rubbed with a beetroot solution to give it a lovely maroon colour. The dense yet crumbly texture has a pleasing gentle aromaand the taste is fresh and salty on the first taste, mellowing to a rich fruitiness. The farm is quite close to the sea which probably accounts for the briny tang to the flavour.
