In the old days we used to phone the Post Office at Schull speak to the postmistress to make our order of cheese. Nowadays things are more structured, but the cheese is still aged 1 year plus using Summer Milk and the Swiss recipe and copper equipment still in use. The micro-climate of Co Cork together with lush pastures gives the cheese its unique savoury and herbal flavours. This is a rare and wonderful Irish cheese to enjoy with Alsace style wines as well as using in Fondue.
