Developed by Chris Gentine, the Vat 17 is a result of two years of continuous testing with a cocktail of cultures in a number of vats. Aged at least two years, the Vat 17 was deemed the most interesting of the tests. Although this is a wax-coated block cheese, the bouquet of flavours is quite bold and unique. Delicate crystallisation spread throughout the pate creates a wonderful contrast to the creamier mouth-feel of the cheese, and the finish is long and persistent. Perfect when married with bigger reds or Normandy Ciders.
