TRADITIONAL RENNET

To get the right level of salt these cheeses are brined once the curds have been separated and placed into moulds. The slight granular texture to the cheese has a rounded fruity taste, with hints of sweet dry hay. Ewe's milk naturally has that 'lanolin' sensation on the palate, which is very interesting. The long taste gives a finish of dried fruits.
