The freshly separated milk is placed into moulds and ripened for twenty days before a coating of honey is brushed onto the rind and then rolled in thyme. The complex flavours produce clean and delicate notes, balancing the sharpness of the goat's milk with woody hints of dried fruits and almonds – both creamy/sweet and bitter. The thyme gives an herbal hit to the finish. An ideal partnering for Crianza or Tempranillo wines.
