Small cylinder crumbly texture with a natural thin soft wrinkled rind and a light earthy aroma. Eaten fresh it tastes floral, rich and mellow and ripens with a little drying out to a smooth textured fudge like consistency with hinds of vanilla. A lovely farmhouse made cheese. Best season late Spring and early Autumn.
