TRADITIONAL RENNET

The traditional rennet brings out the milk style of the Peak District's unique grazing pastures. Our cheeses are matured an extra two to three weeks longer than the classic Cropwell Bishop, giving the curds structure and richness. Threaded with ample blue moulds, the pate develops gorgeous vegetal depths with a slightly savoury edge. Less sweet than other varieties of Stilton, you can partner really fine wines with this cheese, as well as aged ports.
