The hamlet of Cosne de Port Aubry has the river Cher and Loire to give the pastures their much needed moisture since this area has a stoney minerality to the earth favoured by wines such as Sancerre. The small farm has 400 goats and make cheeses such as Crottin de Chavignol as well as this large cone shaped cheese. The texture is smooth and the taste is nutty and dense. Partners sharp white wines percectly.
