Chateau Prieure de Bubas, The Garrigue Carignan & Grenache Noir blend Olivier Durand Roger. The vineyard is near Carcassonne, south of Toulouse and the hot days and cooler nights during the summer give the grapes a smooth and spicy, fruity taste, high in alcohol but low in tannin. The carbonic maceration vinification method means that whole bunches of grapes are packed into closed containers, their weight simply helping the juice to ooze out. The wine can therefore be drunk young and also served slightly chilled too and the flavours of the Garrigue region are evident with their wild thyme, juniper, rosemary, lavender and holm oak flavours coming through.
