TRADITIONAL RENNET

From the heart of the Cévennes, where sheep graze on the protected hillside pastures of the La Causse Mejean, this family-run farm produces very traditional styles of cheese – from soft to hard – taking account of the seasons and the way the milk changes with the pasture and weather. The bark collar around the cheese imparts a sappy aroma and a bosky, smoky flavour, and with a little brine washing of the rind the rich silky earthy flavours come to life. Ideally paired with fruity aromatic red wines, leaning more herbaceous and savoury.
