This September, as we prepare for orchard fruits to arrive en masse into our Marylebone shop, we wanted to reference those flavours with the Early Autumn Board. Anneau du Vic Bilh, from the Pyrenees, is just reaching the end of its season, meaning the flavours will have condensed, with a gorgeous breakdown in the pate, melding spicy notes with a nutty front; Margalet, with its melting texture and sweet lanolin finish, is perfect as the weather turns and we start to crave richer textures; Mahon Tierno, from Minorca, has a potent brittle texture and big umami flavours to boot – buttered popcorn & black pepper, beautiful with big reds; Pont l'Eveque, perhaps the most direct reference to autumn orchards, will pair wonderfully with the featured perry, or an aromatic Calvados; Bavarian Blue, an oft-overlooked blue in the cheese room, is all butter and cream, with just enough stony blue to balance. A delicious board.

65% Merlot, 25% Cabernet Sauvignon & 10% Cabernet Franc. The 2000 vintage was good with wines highlighting blackberry, blueberry and dark cherry. There is a fresh backbone to this wine, as well as warm spice. Emitting luscious creamy and well-defined fruit, there is a delicate finesse that is both elegant and classic.
