For September we keep one foot in summer as we step into autumn. Chabichou, of Poitou-Charentes, while light, earthy and milky when young, develops roasted nutty notes on the rind as it ages; Saint Nectaire, whose pate is turning deeper and deeper gold as summer fades, is beautiful this time of year – sweetly earthy, almost like snow peas, or wild mushrooms; Mimolette Extra Vieille, aged over two years, is dense and caramelly, with a satisfying finish that lends it to a range of wine pairings; Vieux Boulogne, a Phillipe Olivier original, is a beer washed variety really coming into its own this time of year – grilled onions, miso, melting on the palate, exceptionally moreish; Bleu des Causses, a kind of cow's milk answer to Roquefort, wraps things up with gutsy depth, balancing buttery curds with minerally blue veins.

We have just 48 of these bottles at a great price to enjoy now or lay down for up to 10 years (if you can bear to keep it that long!). The 2012 is 80/10 Grenache/Mourvedre, with the balance shared between Syrah, Counoise & Vaccarese. The vines are on the famous pebbly Crau plateau and ageing is between oak and enamel tank. There is obvious complexity from the mix of grapes, with notes of hearth cinder, woodland undergrowth, black fruit, spice and game within a richly fleshy core. Power and potential to age is evident in the tannin's gentle persistence.

Domaine Dampt, Collan, Yonne, Côte d'Or, Burgundy

100% Chardonnay. Pale gold with an instant fresh grassy sweetness coming through. Light and floral with vanilla overtones and the familiar silky smooth, almost nectar finish. The overall taste is fresh and persistent and should be drunk young. The Tonnerois soil is excellent for vines, combining a good exposure to light and sun with appropriate sloped hillsides and chalky stoney structure, enabling the vines to scramble deep into the soil. Just outside the Chablis district, the Dampt family have owned this estate for generations and are multi-award winning vignerons.
