For September we wanted to feature some new arrivals beside some old favourites. Pave Cobble, the newest cheese in our cheese room, is only several months into production, and some exciting things are happening in our maturing rooms to this ewe's milk, most prominently a luscious, melting pate; Flower Marie, another small ewe cheese, behaves much the opposite: as it matures and moisture is lost the pate turns fudgy and dense, with gorgeous nutty and lemony notes; Winchester, made by the Smales family, combines cheddar-making with gouda-making, with beautiful burnt toffee and beefy notes; Nuns of Caen, a favourite in the cheese room, is Charles Martell's washed ewe's milk, with bright tangy notes balanced with rich milk chocolate undertones; Beauvale, a lovely Gorgonzola-style blue made at Cropwell Bishop, is rich, with that familiar sweet-spice you'll recognise from its Italian forebear.

Gironde, Bordeaux

70% Merlot, 15% Cabernet Sauvignon & 15% Cabernet Franc. The vineyard is in the northern Gironde, directly upon crossing the 45th parallel. This invisible line splits the hemisphere in two equal parts and expresses the balance that one feels here. The vineyard spreads out over the Montalon hillside which gives a panoramic view over the plains below and the meandering Dordogne River. The clay-limestone soil and rock give body and fruit as well as well-defined tannins. Perfect for hard crumbly cheeses, as well as goat & ewe's milk cheeses. In fact, a very cheese friendly wine.

46% Phoenix, 22% Madeleine Angevine, 17% Reichensteiner, 10% Orion & 5% Solaris. A crisp, refreshing wine providing distinctly English aromas of crisp green apple, elderflower & freshly cut grass. The ripe fruit flavours and soft acidity balance nicely to create a bright, refreshing wine. Fantastic on its own or with fish dishes. All grapes are hand-picked for minimum intervention, which truly expresses the vineyard & vintage.
