Crumbly-textured with lovely white and gray moulds on the naturally-formed rind. The pate is striking white. Quite a moist cheese when young, drying as it matures to a flakier, crumblier texture. The flavours have plenty of depth of mineral and herbs and the nutty earthy tastes become more prominent on the finish.
