Cow Hard

Traditional rennet made in the province of Belluno high up in the Friuli Alps, this is a simple style mountain cheese packed with flavour due to the overnight brining and then rubbing the rind to prevent moulds growing. The 12C maturing rooms allow a slow and even ripening, and after 12 months the flavours are fruity, nutty an sweetly earthy.
