A hard goat's cheese with a sharp tangy taste and crumbly texture, very like a matured Pecorino. Shaved over pasta or vegetables or eaten with a slice of Quince fruit paste or indeed ripe figs, this is a cheese to be enjoyed on its own as its strident flavours can overpower other more subtle cheeses.
