Cow Goat Sheep Semi-Hard

Cabrales cheese is produced only in the village of the same name and three other villages of the Penamellera Alta township, located on the northern edge of the Europa peaks in eastern Asturias. Principally a cow’s milk cheese, but with additions of goat and sheep’s milk especially in Spring and Summer when other milk is available. The taste is piquant, strong and powerful and is not for the faint-hearted. One of the ultimate cheese tastes. This cheese has a DOP Denominacion de Origen Protegida since 1981.
