A simple, approachable and balanced cheddar that impresses with layers of lingering nutty, slightly fruity and rich buttery flavours. It finishes with mellow caramel undertones. Made with pasteurised milk, this cheddar has flavour notes typically attributed to unpasteurised milk. Cabot Creamery was one of the first family farm cooperatives in Vermont known today for quality cheddar cheese making. Milk for Clothbound is sourced exclusively from one coop member – the Kempton Farm of Peacham – who produce this particular recipe especially for the Cellars at Jasper Hill as their only single-source cheese.
