TRADITIONAL RENNET

A modern cheese from the north of France, giving a different slant to washed rind cheeses. The densely packed pate, which is springy and never runny, is in the form of a domed semi-sphere, and the taste – distinguishing it from its fellow northern washed rinds – is not too strong or aggressive. Ideal accompaniments are blonde beers and lagers. For an interesting toastie try slicing it thin and grilling it.
