A log-shaped cheese that James McCall makes at Chalke Valley Dairy before taking it back to his farm in Child Okeford for washing and maturing. The texture is semi-hard – the centre always slightly firmer with the edges supple and springy. The washed rind is not too pungent, and the taste has a sharp lemon tang together with the sweet nutty richness of the milk.
