Traditionally this cheese/butter was made as a way of preserving the butter and allowing it to remain fresher in this very hot and humid region. The pasta filata or stretched curd encasing the light creamy butter makes a really lovely rich silky texture to the cheese, which you should slice thinly onto crusty bread.
