TRADITIONAL RENNET

A soft, melting Brie with a strong flavour and a sea salty tang. Best eaten when the surface rind is only faintly rippled and not too soft to the touch. Over-ripened cheese can be very powerful and aggressive, with the notes of salt teetering over into bitterness.
