The Henchoz farm is close to the German /French borderand not far from the famous skiing resort of Gstaad. The pastures of La Rossinière have a luscious green densityand the milk shows this well with its richness and buttery flavours. This tender soft cheese, with a thin white bloom on the rind is delicate to the touch and mellow, gentle earthiness to the taste. It takes the milk of 10 sheep to make just one cheese.
