Cow Blue

This is normally viewed as a simple style cheese, yet with a little love and care i.e. affinage, becomes a rich, strong tasting cheese with a velvety texture. The moist nutty flavour and beautiful melting quality of the cheese makes it also a perfect medium for cooking, crumbling over salads and vegetable dishes and stuffing into poultry. An extremely versatile cheese.
