We are delighted to be joined by James Thomas of Billecart-Salmon Champagne House for a truly decadent evening tasting some of the very best Champagnes from this legendary champagne house.
James will conduct a ‘tasting journey’ exploring these complex and diverse Champagnes that are so much more than just an aperitif, taking food & wine pairings to whole new level. From delicate Blanc de Blanc, Brut 2004, Brut Sous Bois, a unique cuvee entirely vinified in oak to their stunning Rosé finishing with a Demi Sec.

Patricia will co host with James as we devise thoughtful and sophisticated pairings of champagne alongside such dishes as delicate Sole in a Blanc de Blanc Champagne sauce with Samphire to a twice baked soufflé with Sous Bois from Switzerland and one of Patricia’s favourite dishes inspired by Mon Vieil Ami in Paris of steamed root vegetables in a delicate broth finished with slivers of foie gras.
Supper will finish with a perfectly paired cheese plate & ‘Champagne Rhubarb’ with Panna Cotta.
This promises to be delicious and insightful evening, which no doubt, after a rather grey January we will be in need of a little decadence.
