TRADITIONAL RENNET

A rubbed, brushed and lightly washed rind housing a chewy-textured cheese, pitted with tiny pinholes. Lovely earthy, floral flavours with nutty rustic undertones in the taste. Late autumn cheeses that appear on the shelves during the winter months are decidedly sweeter due to the drier grasses and seeds, which the goats love to eat. We are often more delighted by these, as they work so well with blond beers and range of wines.
