TRADITIONAL RENNET

Tender log with a flaky pate, aged for twenty to thirty days. A thick coating of charcoal ash gives a mossy, fresh, almost nervous little edge to the flavours. With a bit of ageing the pate becomes denser and fudgier, imbuing it with a citric – and sometimes pleasantly bitter – bite. Great with chilled rosé or sherry.
