Produced in a small alpine dairy accessible only by a footpath, these small logs are made in the style of an Alsace Munster. Young when it arrives to us, we give them extra washings in brine and Gewurtztraminer, adding to the inherent meatiness in the aroma and flavour. We only have these cheeses a few times a year when our cheese-finders are trekking through the hills, so they are always a real highlight when they arrive.
