Made with artichoke thistle rennet, this gives a distinct vegetal flavour to the rich flowing curds and a wild sharply sweet earthiness. Small cheese where the rind is bathed in a brine then rubbed to give a smooth almost waxy feel to the outside coat. Full bodied dry red wines would be a good match.
