A fragile wheel of cheese from a bio-dynamic farm high up in the Pyrénées. The taste is earthy and nutty with a rich, creaminess. This is a seasonal cheese and its flavour profile is markedly changed by the time of year. Spring will see sharper flavours, summer more herbal and floral, autumn richer and sweeter, and winter – when the goats are indoors eating hay and legumes – the flavours are slightly wild and sharp.
