Made with unpasteurised organic milk by Maria Mayer, with the starters cultivated by Maria and the washing of the cheeses performed by her husband Martin. This cheese has won many prizes. There is a rich density to the texture and the flavours of herbs and caramel have a heightened intensity as it ages.
