Made in the province of Belluno high up in the Friuli Alps, this is a simple-style mountain cheese packed with flavour due to the overnight brining and rind rubbing (deterring the growth of moulds). The 12º maturing rooms allow a slow and even ripening, and after 12 - 18 months the flavours are crystallised, fruity, and nutty, with a potent earthy sweetness.
