Dani Duerr makes these traditional cheeses high up in the Alpine region of Graubünden, very close to the border straddling Lake Constance. He has specially matured the cheeses for one year as we love the strong, spicy and salty flavours. He brine washes the rinds to give a lovely ochre colour to the crust. This is the first time his cheeses have been sold outside the immediate vicinity.
