Semi-hard clothbound cheese from the dairy's own milking herd. The two kilogram cheese, aged three to four months, has a lovely herbal grassy sweetness coming through with a toasty finish. A perfect compliment to other British cheeses as a part of a tasting plate of different styles, as well as a useful cooking ingredient for both sweet and savoury dishes.
