The farm stretches across an area of outstanding beauty originally reserved as the hunting grounds for the Monarchs from the Norman Conquest until as recently as the 19th century. This is a new cheese hand made and using milk from their herd of Holstein Friesian cattle. The milk cheese is mixed with traditional rennet and the rind is brine washed. The cheeses are aged a minimum of 3 months but with further ripening the flavours become fuller and fruitier with a softer texture not unlike Alsace or Irish washed rind cheeses.
