A small production certified organic cheese. The long maturing process means that the Thermised milk has time to develop its flavours and dissipate any bacterias lurking after the heat treatment. It's not quite pasteurised but it's not quite raw milk either. However, it has the benefit of the the rind being washed and rubbed with wine to give full bodied fruity and nutty flavours.
