Also known as Formatge Suau de Clúa it is ripened for 2 months. This is a smooth, hard goat’s cheese, covered with wood ash to preserve the rind and prevent bloomy moulds growing on the outside of the cheese. The flavours are creamy and nuttyand not too strong
